A Responsible Network of Collaboration

Over the past nine years, Green City Farm has served as a platform for innovation and sustainability, connecting horticulture and HoReCa students and professionals from field to table. As part of Perho Culinary, Tourism & Business College, it reports on its sustainability practices every two years following the GRI (Global Reporting Initiative) standards.

Sustainability in Education

Perho Culinary, Tourism & Business College is a sustainability-certified institution by the OKKA Foundation. Green City Farm serves as its outdoor classroom, supporting the school-wide sustainability program. A core focus is to integrate a sustainable food system across all studies—emphasizing plant-based meals, local food, and food waste reduction

A Pioneer in Sustainable Gastronomy

Green City Farm champions a holistic approach to food sustainability—ecological, economic, social, and cultural. Circular economy practices are embedded across all educational programs. A tangible example is the “farm-to-fork” model, where food moves from the field to the kitchen, to the plate, and back to the field through composting. The goal is to make sustainable gastronomy an integral part of Finnish food culture.

Supporting a Sustainable Urban Food System

Green City Farm strengthens food sustainability by promoting eco-friendly farming, local food production, and food traceability in an urban setting. It acts as a learning and development platform where consumers, students, farmers, and restaurants come together. Its practices are guided by circular economy principles, seasonal thinking, and raising environmental awareness. The farm is a testbed for innovative, sustainable solutions that enhance local food security.

Restaurant Perho’s Composter – Closing the Loop

A significant portion of Restaurant Perho’s biowaste is transformed into nutrient-rich soil using an on-site composter. At the Töölö campus, biowaste is collected into a rapid composter, turning it into soil improver that is returned to Green City Farm’s fields—completing the sustainable food cycle
