AgriCulinary Students’ Study Trip to Norway

AgriCulinary students and teachers from Perho College (Finland) and ZBC COllege (Denmark) visited Norway from September 10–14, 2024, at Mosjøen Videregående Skole Upper Secondary School.  

In September 2024, it was Mosjøen Videregående Skole’s turn to organize a learning trip for students and teachers of the AgriCulinary Erasmus+ project. 

In the fall of 2023, Perho College organized the project’s first learning trip and in the spring of 2024, it was ZBC College’s turn.

First Day of Study Trip

On the first day, the group visited Sæterstad Gård, an organic farm where Arctic char is raised using cold water collected from the nearby mountain lakes. The fish waste is filtered from the water and used as fertilizer on the fields. 

Sæterstad Gård also has its own electricity generator, powered by a mountain water pipeline. This pipeline also supplies water for fish farming. All waste materials from the water are filtered into large barrels, and the collected organic waste is utilized as fertilizer on the farm’s fields. 

The farm also has goats, and goat milk is used to produce various flavored cheeses on-site. Additionally, the farm offers accommodation and catering services.

Marka Campus & New Culinary Arts Building

Second-year students from Mosjøen Videregående Skole (MVS) organized a guided tour of the Marka farm campus. In the fall of 2024, the culinary education facilities of MVS were moved from Mosjøen city center to the farm campus, located about 15 kilometers outside the city. Now, both horticulture and culinary students study on the same campus. The new culinary school building was inaugurated with an AgriCulinary lunch celebration.

Seafood workshop

On the second day of the study trip, the group participated in a fish and seafood workshop led by Scottish fisherman Roddy. Roddy first taught AgriCulinary students and teachers how to handle and prepare seafood for cooking. 

After the preliminary workshop, AgriCulinary students demonstrated seafood handling techniques to local elementary school students, who also had the opportunity to learn about culinary education.

ArktiskMat Symposium

On the third day, AgriCulinary students and teachers attended the ArktiskMat Symposium. ArktiskMat (Arctic Food) is an annual food symposium held in Mosjøen, Northern Norway. The event features seminars, lectures, discussions, workshops, demonstrations, lunches, and dinners in and around the historic street Sjøgatan. 

Since 2012, ArktiskMat has brought people together to share knowledge about food and culture. The symposium is an inspiring meeting place for young and established chefs and food professionals who want to learn more about Arctic food culture and sustainable practices.

AgriCulinary at ArktiskMat Symposium

At the ArktiskMat Symposium, Jarmo Heimala and Jarmo Liimatainen from Perho College presented the AgriCulinary Erasmus+ project and shared how the AgriCulinary ideology originally began.
